- Skin, remove seeds and cut the mango into small cubes.
- Heat the oil in a pan. Add the mustard seeds and as the seeds start to crack add the turmeric, salt and mango pieces.
- Stir thoroughly, add the water and bring to the boil. Add sugar and continue boiling.
- Stir continuously and when the chutney thickens remove from the heat.
- Cool to room temperature. Refrigerate and serve cold.
