Mango Chutney

1 1/2kg Ripe Mango
1 tsp Mustard Seeds
1/2 tsp Turmeric
1/2 tsp Salt
1 cup Water
5 cups Sugar
1/4 cup Vegetable Oil


  1. Skin, remove seeds and cut the mango into small cubes.
  2. Heat the oil in a pan. Add the mustard seeds and as the seeds start to crack add the turmeric, salt and mango pieces.
  3. Stir thoroughly, add the water and bring to the boil. Add sugar and continue boiling.
  4. Stir continuously and when the chutney thickens remove from the heat.
  5. Cool to room temperature. Refrigerate and serve cold.
