Garam Masala Spice Mix

3 Bay Leaves
1 Cinnamon Stick
2 1/2 tsp Black Peppercorns
2 Star Anise
1 tbsp Cloves
4 tbsp Cardamom Seeds
2 tbsp Cumin


  1. Lightly roast all ingredients in a heavy base frying pan over a medium heat for 5 minutes.
  2. Let cool and grind to a fine powder.
  3. Store in an airtight container.
